Natural processing means the cherry is never pulped. Whole fruit goes onto raised beds and dries in the sun over three weeks, turned by hand several times a day, and the sugars in the fruit ferment their way into the bean. Done carelessly it tastes like compost. Done well it tastes like this.
Attikan sits inside a tiger reserve buffer in the Biligiriranga Hills. The lot is small, the drying is watched hourly, and we buy the whole thing or none of it.
