Almost every masala chai on a shelf is tea dust plus spice oil sprayed on afterwards. It smells enormous in the packet and disappears in the cup.
We do it the tedious way. Cardamom from Idukki, ginger dried and cracked, Lakadong turmeric, cassia-free cinnamon, cloves, and Tellicherry pepper — all ground on a slow stone wheel that does not heat the spice and drive off its oil. Blended fresh into orthodox Assam and tinned within the hour.
It smells modest in the tin. Then you brew it.
