Buffalo milk carries more fat and almost no carotene, which is why the ghee sets bone-white instead of gold. It is also structurally sturdier: it holds shape in heat, it fries at a higher temperature without breaking, and it gives mithai the density that cow ghee cannot.
We culture the milk for sixteen hours before churning, which is what gives it that faint tang underneath the richness.
