You cannot fake danedar. The grain forms only when butterfat is cooked at the right temperature and then left to cool on its own, undisturbed, over the better part of a day. Rush the cooling and you get a smooth, uniform paste. Do it properly and the ghee sets into small distinct beads you can feel on the tongue.
We make it only between November and February, when Kotagiri nights are cold enough to do the work for us. When the season closes, so does the batch.
