Tulsi grows on three terraces behind the mill. It is picked in the morning while the oils are still concentrated in the leaf, wilted for an hour, then folded into warm ghee held at 60°C — low enough that nothing volatile burns off. Six hours later the leaf is pressed and discarded, and what remains is a ghee that smells like a temple courtyard.
